Lamington Cake
This is one cake which was always in my mind for quite a long time..But i totally forget about it as days pass by. But yesterday my dear friend sujitha posted this on her blog, which reminded me instantly. I had all the ingredients on hand and immediately gave it a shot. Modified the recipe to my taste and to my surprise it was like DELICIOUS. Loved it to the core.
I took couple of pieces for me and hubby and packed the whole thing for my sister, because she has been asking me to bake something for her college mates. I am sure they will love it too.
About Lamington Cake Recipe
This cake is like a soft rich vanilla cake dipped in a chocolaty sauce and coated in desiccated coconut. If you are a coconut lover like me, you cannot resist when you roll it in coconut, because the coconut smell just wafts through..It was heaven..

Ingredients for Lamington Cake Recipe
- All Purpose Flour / Maida - 1 cup / 120 grams
- Granulated Sugar - ¼ cup powdered / 50 grams
- Baking Powder - 1 tsp
- Baking Soda - ¼ tsp
- Salt a pinch
- Unsalted Butter - 70 Grams Softened
- Egg - 1
- Vanilla Essence - 1 tsp
- Milk - ½ cup / 120 ml
For Chocolate Coating:
- Icing Sugar / Confectioners Sugar - 1.5 cup
- Cocoa Powder - 2 tbsp
- Water - ¼ cup
- Unsalted Butter - 1 tbsp
- Desiccated Coconut - 1.5 cup or as needed

How to Make Lamington Cake Recipe
- Preheat oven to 180 Degree C.
- Take flour, salt, baking powder, baking soda in a bowl. Mix well and set aside.
- Take butter, sugar in a bowl and beat till creamy and fluffy.
- Add in egg and vanilla, beat again and till fluffy.
- Now add in flour mix and milk alternating, ending with flour.
- Pour this into a prepared pan. Bake it for 20 to 25 mins.
- Remove it and let it cool completely. once it is cooled, slice the dome off and cut into squares.
- Now make chocolate glaze, take water and butter in a bowl, microwave it for 30 sec till the butter is melted.
- Take sugar, cocoa in a bowl and mix well. Add water butter mix slowly and mix well. The glaze should be little thick.
- Now take a cake and dip it in glaze and coat in coconut.
- Serve.

Ingredients
- 1 cup / 120 grams All Purpose Flour / Maida
- ¼ cup powdered / 50 grams Granulated Sugar
- 1 tsp Baking Powder
- ¼ tsp Baking Soda
- Salt a pinch

Desiccated coconut needs to be sweet? And can we use normal chocolate?..thanks 🙂

@Anantai used unweetened one, and any chocolate can be used
